My mom's recipe: 2 sticks softened butter 2 c. flour 1 egg Cut the butter into the flour using a pastry mixer, and then mix in the egg. If the dough is crumbly, add a little water. Roll the dough out on a well-floured surface. It makes two crusts. (For an apple pie, that means top + bottom; for a pie with no top crust, you'll have two bottoms. Better make extra filling!) This dough doesn't need to be chilled overnight, and it's easy to smoosh back together if you rip it.
