Shavuot. Cheese Torte Ingredients: For crust: Pâte brisée or 2 pie crusts Filling: 2 cups (15 oz) farmer’s cheese (petit Suisse or fromage blanc, or any other light white cheese) 3 eggs 3/4 cup sugar 1 1/2 teaspoons all-purpose flour 1 teaspoon grated lemon peel 1/2 cup light raisins, soaked in hot water 1 egg separated (yolk to brush pastry) Directions: You need two crusts: One for the pie and one to cut for the lattice work on top after the pie is filled with the cream cheese mixture. Beat cheese with mixer until light. Add 3 eggs, 3/4 cup sugar, flour, and lemon peel; beat till creamy. Stir in raisins. Turn into pan. Bake in 350 degree F. oven for 45 to 55 minutes or till knife inserted off-center comes out clean. Cool.
